    5 Tbsp butter softened
    1/2 cup of white sugar
    1 large egg
    The zest of 1 lemon
    The juice of 1 lemon
    20 drops yellow food coloring
    1-1/4 cup all-purpose flour
    1 tsp baking powder
    1/4 tsp salt
    1/3 cup powdered sugar

    2. Stir in flour, salt, and baking powder until just combined. Scrape sides of the bowl and mix again briefly.

    3. Cover the bowl and place in the fridge for 1 to 2 hours. In the meantime, in a small bowl put powdered sugar and set aside. Line a large baking sheet with parchment paper and set aside.

    4. After cookie dough has been chilled, roll about 2 Tbsp of dough into a ball and roll in powdered sugar. Place on the baking sheet a few inches apart and repeat with remaining dough.

    5. Bake at 350 F for 12 minutes. Allow them to cool before eating.

    Enjoy! Buen Provecho!
