Potato Cheese Balls - Kelvin's Kitchen







Potato Cheese Balls Recipe:

Ingredients:
2 lbs potatoes
1 large egg
2 tbsp parsley
2 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
1 teaspoon paprika
1 tbsp corn starch
Mozarella or Cheddar cheese, cubed

For coating:
1/2 cup (60g) flour
2 eggs
1 cup (110g) breadcrumbs
Oil for frying

Directions:
1. In a large pot of salted water boil potatoes until fork tender.
2. Mash and let cool.
3. Add egg, pepper, paprika, garlic powder, corn starch, and chopped parsley. Mix until combined.
4. Scoop with an ice cream scooper the potato mixture and place on a baking tray.
5. Place 1 cube of cheese in the center, close the potato mixture around the cheese and shape into a ball.
6. Prepare 3 separate balls: 1 with flour, 1 with beaten eggs, 1 with breadcrumbs. Coat the potato ball in flour, then egg, then breadcrumbs
7. In a medium pan heat vegetable oil to 360F (180C). fry potato balls in small batches for about 2-3 minutes until golden brown.
8. Transfer to a paper towel to drain. Serve warm.
