  1. Crispy Smashed Potatoes Recipe

    Ingredients:

    2lb baby potatoes
    1 tbsp olive oil
    5 garlic cloves
    3 sprigs rosemary
    3 sprigs thyme
    1 stick of butter
    Kosher salt and freshly ground black pepper

    Directions:
    Preheat the oven to 350°
    Pop the potatoes into a pot and cover with water. Bring to the boil with a pinch of salt and simmer for 15 minutes until cooked
    Drain and cool off in an ice bath, until they are completely cool
    Using a potato masher, gently smash the potato so that it breaks the surface and makes them super crispy
    Arrange on a roasting tray, lined with parchment paper
    In a small pan over low heat add in the butter, garlic, rosemary, thyme and olive oil, simmer for a few minutes to infuse the butter
    With a pastry brush apply to infused butter to the potatoes
    Place in the oven for 45-50 minutes until golden and crispy
