Cucumber Tomato Salad - Kelvin's Kitchen

  1. Ingredients:

    2 cucumbers, diced
    1-pint grape tomatoes, quartered
    1 red onion, diced
    2 tablespoons extra virgin olive oil
    2 tablespoons lemon juice
    2 tablespoon red wine vinegar
    1 teaspoon salt
    2 teaspoons Italian seasoning
    1 teaspoon black pepper
    1 garlic clove, minced

    Instructions:
    In a large bowl, toss together cucumber, tomatoes, and onion.
    In a small bowl, whisk together olive oil, lemon juice, vinegar, Italian seasoning, salt, pepper, and garlic.
    Pour over the salad and toss to combine.
    Cover and refrigerate at least 2 hours before serving.
